Turkey Stuffing: --------------- Recipe sized for 10-12 pound turkey, scale as needed 1 cup butter 1 cup minced onion 3/4 cup chopped celery (about half a bundle) w/ leaves 1 tblsp poultry seasoning 1-1/2 tsp salt 3/4 tsp pepper 1/3 cup chopped parsley 2 beaten eggs 2-1/2 quarts soft bread crumbs (I generally use about 1 large loaf of white bread for this recipe as written, 2 when doubled) melt butter, cook onion and celery with seasoning for 5 minutes add eggs and bread, stir thouroughly, then stuff in turkey cavities or put in baking pan.
