Recipe from Kerry Benson: Ingredients: 1 cup milk 3/4 stick margarine 1 1/4 cup sugar 2 eggs 1/2 tsp cinnamon 2 cups cooked mashed sweet potatoes or canned sweet potatoes. Topping: 3/4 cup crushed corn flakes or rice crispies or granola or anything that will make a cruchy topping. 1/2 cup brown sugar 1/2 cup chopped nuts (optional) 1/2 stick margarine. Directions: Add all the ingredients to the 2 cups of sweet potatoes. Put into 1 1/2 qt. casserole dish. Bake at 350 degrees for 40-50 minutes. Take souffle from oven and spread topping on. Return to oven at 400 degrees for 20 minutes.
