POTATOS PANCAKES ---------------- 2 cups coarsely grated potatoes (peeled or not) 3 eggs 1/4 cup oil 1 TBS grated onion 1 1/2 TBS flour Wrap these in a dish towel and squeeze out as much liquid as possible. The older the potato the better. Combine with eggs, flour and onion. Heat oil in a medium hot skillet. drop spoonfuls of potatoes into oil. Spread into 3 inch pancake 1/4 inch thick or so turn when brown brown other side about 3-5 minutes each side drain. serve with applesauce/ sour cream chives
