Potato Leek Soup w/ Meatballs ----------------------------- 1-1/2 lbs ground beef 3 large leeks 4 carrots 3 potatoes 1 bay leaf s+p 1-1/2 tbslp sesame oil gallon of chicken stock - adjust for quantity desired 1+ tblsp minced garlic shape ground beef into 1" or smaller meatballs and set aside clean and trim leeks, finely slice into rings and set aside clean and chop carrots into discs Boil meatballs in vege or chicken stock Remove meatballs and set aside, allow stock to cool, remove oil saute leeks and garlic in sesame oil until soft Add stock back in, bay leaf, s+p to taste bring to a boil Add potatoes and meatballs Simmer 15-20 minutes Add carrots in last 5 minutes or so. Longer if you prefer softer carrots.
