General Tso's Chicken --------------------- 1 lb boneless chicken, cut into small pieces (1" medallions or so) 3 eggs beaten 1/2 cup+ corn starch 5 dried pepper pods 1-1/2 tbsp rice vinegar 2 tbsp rice wine or sherry 3 tbsp sugar 3 tbsp soy sauce Blend corn starch and eggs, add chicken and toss to coat If mixture bonds too well, add some vegetable oil to separate pieces In a small bowl, combine 2 tsp corn starch with wine, vinegar, sugar, and soy sauce. First Fry: Heat 1-2 inches peanut oil (or vege oil) in wok to medium high heat (350-400). Fry chicken in small batches, just long enough to cook chicken through. Remove to absorbent paper and allow to stand. Second Fry: Tblsp or two oil in wok, add pepper pods and stir fry briefly - do not burn the pepper pods! Add chicken pieces to wok and stir fry until crispy brown. Add sauce mixture to wok (be sure and stir mixture right before adding) toss over chicken until sauce caramelizes into glaze. Serve immediately.
