Aloo Keema (Potatoes, ground beef)- medium sized pot - 5-7 quart size will do Ingredients- • 1/4 cup vegetable oil or Canola oil or corn oil (will be used to fry the onions in) • 1 big onion chopped/diced • 2 peeled tomatoes- diced • 1/2 can of plain tomato paste (small can) • 1/2 tsp cayenne pepper • 1 tsp Garam Masala (easily available at any Indian grocery store), in a can or packets • 1/2 tsp cumin power or whole seed cumin • 1/2 tsp turmeric • 1 tsp salt • 1/2 tsp black pepper • 1/2 tsp ginger and 1/2 tsp of garlic chopped (can get paste of mix of both at any Indian store) • 1 Jalapeno pepper diced or sliced small pieces (not needed but adds little flavor and heat) • 1 lb ground beef • Potatoes- gold, red or russet (4 medium sized or 3 large)- chopped into 1 inch or bigger • Green beans (totally optional) - can use frozen chopped. • 1 cup water • Cilantro (no measurement for this, just take leaves off of 5-8 branches) save for very end to drop in pot once everything is cooked [I skipped this, family doesn't like Cilantro] Cooking process- 1. Add 1/4 cup cooking oil & heat on medium to high heat 2. Drop in diced big onion & brown till almost charred 3. Drop in peeled tomatoes & all the spices (cayenne pepper, garam masala, cumin power, salt, black pepper, ginger/garlic paste or diced, jalapeno peppers,turmeric) 4. Cook/stir for 5-7 minutes 5. Drop in ground beef & cook for 10-12 min till fully brown 6. Drop in chopped potatoes, tomato paste & green beans, (optional)- stir good 7. Drop in cup of water & lower heat to LOW & cover pot with lid 8. Let cook for 20-30 min (test if potatoes are cooked, poke with knife) 9. If potatoes feel soft (not very soft) it is done 10. Add chopped Cilantro at the end and cover for 5 minutes [I skipped this, family doesn't like Cilantro] 11. DONE Can eat with pita, or any kind of bread or Basmati rice goes really well with it. RICE- if basmati then just add bunch of water in pot and cook 1 cup or rice, bring to boil and drain water after rice is little soft (10 min)- all done. I needed more water added.
