Shortbread 

1 pound butter
1 cup superfine sugar
5 cups flour

Cream butter and sugar - add flour

knead until smooth and pliable

press into jellyroll pan or cookie sheet

press around the edges of the pan with the flkat side of fork

prick over all with tines of the fork

bake 350' 25 to 40 minutes until light brown.

CUT IMMEDIATELY  cool in the pan

superfine sugar is hard to find look in the drink mixer section
